These habanero mint avocado tuna cakes are so simple to make, they came out super crispy on the outside, were tender in the middle, I only used a few ingredients and you just need about 30 minutes to make these!
In a large bowl I mixed in an avocado, fresh mint leaves, parsley, seasonings of choice, one egg, breadcrumbs, and my favorite tuna; from Safe Catch. I decided to use their Habanero Mint flavor to give this patties extra flavor but really any flavor or even plain would work just fine! They have a variety of flavors to choose from, such as garlic & herb, chili lime, cajun, original, and tandoori; which is definitely my favorite! I stick to their tuna because it has the lowest level of mercury than any other brand and is great for anyone following the Whole30 diet, Paleo, gluten free, or anyone looking to add more protein into their diets (it has 35 grams per can!) You can check out another recipe I made with Safe Catch; here. I made tuna tacos with a apple brussels sprouts walnut slaw! This tuna is also amazing because it is the lowest in mercury than any others and there is no added fillers and it just tastes amazing. You'll notice a difference in taste, trust me!
Anyways, back to these patties! I love the combo of tuna and avocado and normally instead of using mayo, I always opt to use an avocado as the creamy base to mix together the tuna with all my favorite spices. A ripe avocado gives it that buttery rich taste and personally find it to be more filling and gives you some added healthy fats instead of using mayo! Sooo, I decided to add a half of an avocado into the mix along with everything else and then bake the patties in the oven. I think that the avocado kept the tuna cakes tender and soft in the middle yet they were super crispy on the outside! I also added in some extra fresh mint leaves to keep these patties light and refreshing and just enhance the flavor of the tuna, but if you are using their plain flavor you can still use the same ingredients or leave it out! You really just need an egg for the binder, the avocado, as well as breadcrumbs and then you can truly use any spices you would like! The texture resemblance reminded me of a falafel and they were light tasting, but full of protein and healthy fats! They make a really healthy and filling lunch thrown on top of salads, tacos, over veggies, etc and are easy enough to make during the work week!
One can makes about 6 patties so feel free to double the recipe, but note that they will last up to 2-3 days in the fridge after baked!
What you need:
Yields 6 patties/cakes
prep time: 10 minutes
Bake time: 20 minutes
total time: 30 minutes
1 can Safe Catch Habanero Mint Tuna
1/2 ripe medium avocado
2 tbsp. chopped parsley
3-4 mint leaves, chopped
1/2 cup breadcrumbs
sea salt to taste
pepper to taste
optional add ins: chopped onion, garlic, any spices you love!
What you need to do:
1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper. Set aside.
2. In a large mixing bowl, combine the above ingredients and mix well!
3. Form into 6 equal sized patties.
4. Bake at 400 degrees for 10 minutes on EACH side. (Flip after 10 minutes). They will be golden brown with crispy edges and tender/soft in the middle.
For the breadcrumbs, I made my own by grinding crackers in a food processor but feel free to use panko, breadcrumbs etc! I haven't tested flour, but I believe that it will work. To make it easier, I added the breadcrumbs, the herbs and the spices into my food processor all together to make sure they were completely blended and chopped up!
I have not tested a flax or chia egg
Feel free to add any additional spices or flavorings of choice, the tuna was already seasoned with spices so I only added in additional sea salt, pepper and extra mint to enhance the flavors!
Store the patties in an airtight container for up to 2 days! To reheat simply place them back in the oven under the broiler for a few minutes or at 400 degrees until warm.
