After having Vivien about 2 weeks ago I am quickly realizing that constantly having healthy snacks around the house is what is going to keep me going throughout the day. Often times I do not have time to put together an elaborate meal and I find myself a bit hungrier than usual these days because I am nursing her around the clock.
Which is why I created these hearty granola bars, they are easy to make, filled with chopped nuts, sprouted oatmeal, dark chocolate, dates, ground flaxseeds, almond butter and a few other ingredients to keep you satisfied until your next meal. I also added in some of my Majka Nourishing Lactation Protein Powder - it is optional in the recipe, but if you are a nursing mom like me, I highly recommend it! It has helped me tremendously with my milk supply in just the two weeks that I have consistently been using it! It is a postnatal vitamin and helps with boosting your energy, digestion, and it truly does make a complete different in how I feel. They have an original (Green Vanilla) flavor or Chocolate! I love adding a scoop of the powder into my morning smoothies to start the day off right- it is so easy! For this recipe I used the Green Vanilla. When I first came home from the hospital my milk supply hadn’t fully come in and I struggled the entire week with feeding Vivien. It did leave me feeling frustrated, completely stressed out, and overwhelmed as I wasn’t sure if it would ever come in! I kept asking all my mom friends how long it took for them and what they did to help boost their supply! These granola bars are:

You only need about 30 minutes, one bowl and you have the perfect snack to last the rest of the week! I love having them early in the morning before I first feed Vivien, as quick breakfast, or afternoon treat!

Yields 6 large bars
2 cups quick cooking oatmeal
1 cup whole wheat flour (or oat flour)
1/4 cup ground flaxseeds
1/4 cup hemp seeds
2 scoops Love Majka Plant Based Nourishing Lactation Powder
1/4 cup coconut sugar
1/2 cup almond butter
1/2 cup coconut oil
1/2 cup maple syrup
1 tbsp. vanilla
pinch of sea salt
dash of cinnamon
add this part in last:
1/2 cup chopped nuts (cashews/walnuts)
1/4 cup non-dairy chocolate chips
8 pitted dates, chopped
Preheat your oven to 350 degrees and lightly grease a 9x9 pan with coconut oil
Over low heat melt together the maple syrup, coconut oil, and almond butter. Allow to cool
In a large bowl mix together all of the dry ingredients.
Beat the egg and then add the egg as well as the remaining wet ingredients to the bowl.
Mix together until fully combined. I found that using my hands was the easiest!
Lastly, add in the chopped nuts, pitted dates, and chocolate chips or anything else you want to add in! Fold in gently.
Spread the mixture evenly in your 9x9 pan.
Bake for 30 minutes.
Allow to cool for about 20 minutes before cutting.
Will last about 2 weeks in the fridge!
If you aren’t breastfeeding and want to make these granola bars you can leave out the lactation powder and add in your favorite protein powder or collagen powder!
You can sub the almond butter for any nut or sunflower seed butter of choice!
You can freeze these granola bars for up to a month!
These bars aren’t super sweet, but you can leave out the coconut sugar but it may change the texture. You can sub the maple syrup with any liquid sweetener of choice!
