Whoaaaaaa. These brownies are a MUST!
Normally I am a chocolate chip cookie kind of person, but I have been craving a really fudge like dense brownie that melts in your mouth….and these are it.
These dark chocolate brownies are more gooey and rich versus a cake like brownie. They only require a few ingredients and can be made vegan too!
They are messy, chocolatey, rich, and just the best ones that I have made! You have to try them out for yourself!
Store them in the fridge and they will last up to a week. If you want a warm gooey brownie each time, just pop one in the microwave for a few seconds and eat as is or topped with ice cream, coconut butter, or even a drizzle of peanut butter! SO GOOD.
Prep time: 15 minutes
Bake time: 20-25 minutes
Total time: Less than 45 minutes
Yields: about 15 brownie squares
1 stick + 2 tbsp. of butter, softened = 10 tbsp. (I used Earth Balance Vegan Butter Sticks)
1 cup coconut sugar
1 cup cacao powder
pinch of sea salt
1/2 tbsp. vanilla
1/2 cup non dairy chocolate chips
Pre-heat your oven to 325 degrees and either line a 8x8 pan with parchment paper or lightly spray with cooking oil
Over medium to low heat, melt together: the butter, cacao powder, sugar, and sea salt.
Once the mixture has been completely combined, take off the heat and allow to cool slightly.
In a large bowl add the mixture; eggs and vanilla and stir constantly until completely mixed.
Add in the chocolate chips. Stir.
Pour into the prepared pan and bake for about 20-25 minutes.
To test if they are done, stick a knife in the center and if it comes out clean they are good to go! Allow to completely cool and then slice into squares!
