Throughout this pregnancy one of the things that I have wanted the ABSOLUTE most are sweet potato fries. Ironically I seem to be craving everything I never ate before or actually disliked (tons of fruit, green smoothies, fresh juice….) My love for coffee is starting to diminish again like it did in the first trimester and I have been staying away from nut butters and protein (comes and goes) too. It is interesting to me how my taste buds are changing constantly. However, besides the normal feelings, I do feel really good!
Today after my workout, I wanted to attempt to make homemade ketchup with sweet potato fries for a snack. I knew that it could be done using beets as the base and that it was relativlty easy! I hadn’t attempted it before, but was so happy with how it turned out.
It is slightly tangy, a little sweet, creamy, and very easy to make. I made mine using my food processor, but a vitamix or any type of blender should work! For this recipe you will need; beets, dates, apple cider vinegar, water, and a handful of spices. I would say that this ketchup has more of an “earthy” taste from the beets, but it isn’t overpowering at all. I actually think that ketchup you buy from the store tastes sweeter and not as “real.” I don’t know if that makes sense, but sometimes ketchup always tastes a bit off to me and I love how natural this beet ketchup is!
For this recipe, I used pre-cooked beets (love the brand Love Beets) but you can use regular beets and then cook (boil) them yourself. It will take a bit longer, but will give you the same results!
Yields: about 1 cup
Prep time: 10 minutes
Total time: less than 15 minutes
1.5 cups sliced beets (I used pre-cooked beets, see above)
5 pitted medjool dates (can sub coconut sugar, start with 1/4 cup)
1/2 cup apple cider vinegar (can sub white wine vinegar)
1/4 cup warm water
pinch of sea salt
1/4 tsp. pepper
1/4 tsp. turmeric
1/4 tsp. ginger
dash of paprika
*Note, all spices according to your taste preference!
In your food processor or blender add all of the above ingredients together.
Blend until creamy.
Taste test and adjust to needs!
Lasts up to 5 days in the fridge. I love this with sweet potato fries, on veggies burgers, zucchini fries, eggs, etc.
