Lately I have been wanting to have a few healthier snack/dessert options on hand - ones that I can keep in the freezer to last a bit longer. These little banana bites filled with peanut butter and dipped in chocolate are the easiest thing you can make! The frozen bananas taste a little bit like ice cream and the combination of chocolate and peanut butter is something you can’t beat! If you are allergic to nuts or peanut butter you can sub with any sunflower seed butter or even try coconut butter in the middle!
After evenly slicing the banana, I filled each one with a little layer of peanut butter and then allowed them to set in the freezer for about 30 minutes. Once they were easier to work with and a bit frozen, I melted chocolate over the stove and carefully dipped half of the banana bites into the chocolate. Topped a few with cacao nibs and sea salt flakes and then allowed them to set in the freezer once again for another hour!
You definitely need to keep them in the freezer since they melt quickly! They will last a while and you’ll always have something on hand when you need it!

Makes about 10 little bites
1 large banana
Peanut butter or any sub of choice
About 1/4 cup dairy dark chocolate, melted
1 tbsp. coconut butter (optional)
toppings: sea salt, cacao nibs, goji berries, shredded coconut flakes
Slice the banana into even sized slices
Layer one side of the banana slice with peanut butter or any nut/seed butter
Top with another banana slice.
Allow to set in the freezer for about 30 minutes
Melt the chocolate and the coconut butter over low heat on the stove. Pour into a small dish.
Dip half of the banana bites into the chocolate (or the whole thing!).
Top with toppings of choice
Allow to set in the freezer for an hour or so!
Eat immediately from freezer. Lasts up to a month or so!
