Whenever I have chips, crackers, or veggies as a snack, I always need to have a dip with it- salsa, homemade guacamole, or hummus. I wanted to change things up a bit and make a dip, since I haven’t done that in a while. Since we are still pumpkin everything season, I decided to make this creamy pumpkin cream cheese dip. It is SO easy, dairy free, and really tasty - both sweet and savory. I used dairy free cream cheese for the base, then added in pumpkin puree, cinnamon, pumpkin spice, Vital Proteins Marine Collagen, a little maple syrup, and almond butter!
It is perfect for snacking, bringing to holiday parties for an appetizer, or spreading on bagels/toast in the morning! I also had it with roasted sweet potato fries the other day and it might be my favorite way to have it.
As you all know by now, Vital Proteins is my go to for collagen. I added in one scoop into the dairy free pumpkin cream cheese; giving the dip additional protein so it will keep you satisfied until your next meal. I normally add the Marine Collagen into my morning coffee, smoothies, and all of my homemade energy bites. It is really easy, tasteless, and provides so many benefits to not only your skin and hair, but your gut as well! The last one is really important for me; so I try and make sure I have 1-2 scoops daily or a few times a week; especially if I am traveling! Helps keep everything on track.
For this recipe you just need a few ingredients and about 10 minutes. I have made this a few times - the way it is written out below and without the pumpkin puree. I didn’t have any on hand, so I simply added in more pumpkin spice, a little more maple syrup and almond butter. The best thing about the recipe is that you can taste test as you go along; so start off with a small amount of each ingredient so you can adjust along the way!
Use the dip for:
Spreading over toasts or bagels
Roasted Sweet potato fries
On top of muffins, cupcakes (as frosting) or sugar cookies!
Snack / Appetizer
Prep time: 5 minutes
Total time: 10 minutes
Yields: roughly 1 cup
8 oz of your favorite dairy free cream cheese
1/2 tbsp. pumpkin spice
dash of sea salt
dash of cinnamon
1-2 scoops Vital Proteins Maine Collagen
1/4 cup canned pumpkin puree
1 tbsp. maple syrup (add more if needed)
1/4 cup almond butter (optional!)
optional add ins: chopped walnuts, vanilla extract, ginger.
Either by hand or using a blender, mix all the ingredients above until fully combined. Taste test and adjust to needs!
Store in an airtight container in the fridge for up to 1 week.
