The other week on a blog post, I shared that So Delicious was my favorite non-dairy alternative for yogurts, nut or coconut milks, and even creamers for my coffee; but I especially love their frozen desserts. . Being allergic to dairy, this product is the one I can trust when it comes to taste, consistency, and ingredients!
Recently they launched their new So Delicious Dairy Free Frozen Mousse! I was fortunate enough to try out 4 different flavors, Chocolate Chip, Lemon Swirl, Salted Caramel Swirl, and Peanut Butter Swirl.
If I had to pick my top two flavors of the four, I loved the Lemon Swirl and the Chocolate Chip, but all were so light tasting, had the perfect amount of sweetness, were fluffy, and full of flavor; nothing artificial about it at all! The Chocolate Chip had chunks of chocolate chips, the Peanut Butter was so creamy, light, with so much peanut butter swirled in the mousse and the Lemon Swirl was super refreshing! To be honest, I ate them right out of the container!
Each container contains either 300 to 330 calories, so it is something that you can feel good about eating; not only are they dairy free, but they do not leave you feeling heavy.
I decided to make frozen dessert sandwiches with the dairy free Frozen Mousse and my homemade grain free almond butter cookies! They were SO GOOD! The mousse in between the crunchy cookies, was melt in your mouth…These would be really fun to make at a party, for children, dinner party with friends, or just for yourself!
Here is the recipe for the grain free almond butter cookies: so you can make these dairy free frozen dessert sandwiches too!
Yields: 12 cookies
Total time: 20 minutes
2 cups almond flour
1/4 cup coconut oil, melted
few dashes sea salt
dash of ceylon cinnamon
1 tbsp. vanilla
1 tbsp. chia seeds
1 tsp. apple cider vinegar
1/4 cup maple syrup (optional, for sweetness)
1/4 cup creamy almond butter
1/4 cup added chopped walnuts
1/2 cup cacao nibs or dairy free chocolate chips
1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
2. In a large mixing bowl add all of the above ingredients. Mix until well combined.
3. Scoop a spoonful out, add to the baking sheet, and bake at 350 degrees for about 20 minutes. The bottoms will be slightly golden brown, crispy edges, and soft center.
4. Store in the fridge for up to a week.
Once the cookies are done, you can store them in the freezer so they harden a bit to make the sandwiches!
Once the cookies are completely cool, take your favorite flavor of the So Delicious Dairy Free Frozen Mousse, scoop out with a spoon and sandwich in between the cookies! I suggest to eat the cookies immediately. However, if you are planning to save them for a later time; store the pre-made frozen dessert sandwiches in an air tight container in the freezer. You can also wrap the frozen dessert sandwiches individually in aluminum foil and place them in the freezer.
