Turmeric Lemon Doughy Cookies (dairy free, paleo)
Usually when I grab a cookie, I immediately go for a chocolate chip cookie and I think most people would follow suit, but these turmeric lemon cookies will definitely change your mind. The outer edgers are super crispy, while the middle is so soft and doughy it practically melts in your mouth. Ok, maybe because I baked them on purpose that way, but I love when cookies turn out like that. Crispy edges, barely baked center, but obviously baked enough so you will not get sick; but the one thing you won't have to worry with these cookies is there are no eggs! So you could eat the dough, if you wanted to!
These doughy cookies are so light and refreshing, they make the perfect spring time dessert. They kind of remind me a sugar cookie with a little lemon kick! For this recipe, I not only grated a little lemon zest into the batter, but I used one of the REBBL new flavors- Turmeric Lemon Tart elixir to give it that extra, yet not overpowering, lemon and turmeric flavor. I fell in love with REBBL a while back when I first discovered their Turmeric Golden Milk have been obsessing over all of their flavors! Think of this new flavor, the Turmeric Lemon Tart elixir as a tangy upgrade to the golden milk. All of REBBL drinks are coconut milk based making them extra creamy and smooth. I also love that each bottle contains different adaptogens that all help with the body in different ways and it is explained on the bottle! Adaptogens basically help balance out your body and its' reactions to different stressors it faces, in simple terms. This particular flavor that I used for the recipe has hints of honey, lemon juice, turmeric, black pepper, vanilla, and coconut! It was the perfect addition to the these cookies. These cookies do not contain any refined sugars, which you all know by now that I am very anti because REBBL drinks are sweetened with Stevia, which does not affect your blood sugar levels the same way that refined sugar does! A little goes a long way as it tends to be on the sweeter side! Also, with the inclusion of the turmeric from the REBBL drink, each bite has the possibility to offer up some anti-inflammatory benefits! So, while these are cookies, they are packed with benefits that you can feel good about from the inside out!
The cookies are simple to mix together, but the dough will be a little wet, so you will need to let it firm up a bit in the fridge before baking! After about 45 minutes has passed you can bake them for about 10-12 minutes and a perfectly lemony doughy cookie ball will be born. Once they are fresh out of the oven, I like to sprinkle them with either a little coconut sugar or shredded coconut! Once they cooled off, I actually stored them in the freezer so I wouldn't eat them all in one sitting. To be honest, I preferred these cookies straight from the freezer, so my trick didn't really work. They didn't become hard and you didn't need to reheat them in the oven, they basically tasted like a lemony raw sugar cookie dough! Heaven!
What you need:
Yields: 10 cookies
Prep time: 10 minutes + 45 minutes to set in fridge
total time: 1 hour 10 minutes.
1/4 cup coconut oil
2 tbsp. Turmeric Lemon Tart REBBL elixir
1/4 cup maple syrup
1 heaping tbsp. lemon zest
1/4 tsp. sea salt (few pinches)
1/2 tbsp. vanilla
2 tbsp. coconut flour
1 1/3 cups almond flour
1/2 tsp. baking soda
1 tbsp. unsweetened shredded coconut
What you need to do:
1.. Mix together the wet ingredients: coconut oil, REBBL elixir, maple syrup, lemon zest, and the vanilla in a small bowl.
2. In a small bowl combine the dry ingredients: baking powder, almond flour, unsweetened shredded coconut, coconut flour, and the sea salt.
3. Combine the dry ingredients and the wet ingredients in the same bowl. Mix until well incorporated by hand.
4. Place the dough in the fridge for 45 minutes to become firm.
5. After 45 minutes, preheat the oven to 350 degrees and line a baking sheet with parchment paper.
6. Scoop out a spoonful size of the dough and roll into balls. Place on baking sheet and bake for 10-12 minutes. Check after 10 minutes. The middle will be dough like, but the bottoms and the top of the cookie will be a golden brown color.
7. Sprinkle with shredded coconut & store in the fridge for up to a week.
Notes:
I haven't tested any other flours.
If you want the cookies to be sweeter, add 1/3 cup maple syrup. For more a lemony bold taste add 1 extra tbsp. of the elixir. If you do not have the elixir you can sub for lemon extract of fresh squeezed lemon juice. I have not tested, but I am sure that it will work.
The dough will be wet before allowing it to firm in the fridge, you will need to let it sit in the fridge before baking.
