OK, so I think this is my newest healthy treat obsession! Chocolate covered frozen banana pops with two different flavors of granola sprinkled on top, giving them the perfect amount of crunch and a little extra flavor. After letting the bananas settle in the freezer once they are covered with chocolate and granola, the center tastes just like ice cream; almost a hot fudge sundae on a stick! You will be addicted after your first bite.
The granola that I decided to use for this recipe, is one of my favorites; paleo passion foods grainless granola! You all know by now that I am anti-sugar and prefer to keep my consumption of sugar at an all time low. Too much sugar just makes you feel blah, tired, spikes your blood sugar levels, causes inflammation, skin problems, and just makes you crave it more and more. Not good.
Usually when you think of granola, you think it will be high in calories, high in refined sugar, and lacking something whether it be the crunch factor, the flavor, or the clusters. We all know the best part about granola is the clusters! Well, let me introduce to you paleo passion foods granola, just one bite and your smoothies, yogurts, oatmeal bowls, snacking days will forever be changed.
These bags have it all: the entire bag is full of clusters and I am talking about the size of cookies! It is paleo, so it is made of things like walnuts, almonds, pecans, sunflower seeds, coconut oil making them higher in protein than most and more fiber, so you will stay fuller longer. And, the best part, 1 serving size has only 4 GRAMS of sugar! Just 4!!! While most other granolas are full of refined sugar, carbohydrates and lower in protein. Making this granola totally OK to eat handfuls straight from the bag....
They use maple syrup and honey to sweeten the granola, which is better than white sugar or agave, it actually has health benefits for you! For example, maple syrup is lower on the glycemic level and affects your blood sugar less than would white sugar. Both honey and maple syrup have antioxidant properties, help reduce inflammation in your skin, and they make a great alternative for improved digestion. Every ingredient is one you can actually pronounce and know, no googling what anything means!
I created a recipe using the Choco-Nuts and the Caribbean Coconut flavor to make the perfect crunch addition to these chocolate covered frozen banana pops and paired them with a really healthy chocolate bar for the chocolate, to keep the ingredients super clean and healthy! They make the most refreshing treat on a hot day, after dinner, afternoon pick me up, are perfect to curb any sweet tooth craving and just fun to make!
Here is what you need to do:
Yields 6 pops (total of three bananas)
3 bananas *
1 chocolate bar (2.5 oz) I used eating evolved almond sea salt bar (code: blairftmt)
A few small handfuls of PPF granola, chopped, any flavor works.
Chopsticks or popsicle sticks
*I choose ones that weren't spotty, if you prefer them to be on the sweeter side, choose a very ripe banana.
1. Peel the banana and cut in half. Place either the chopsticks or popsicle sticks in the banana to create a popsicle. Line a baking sheet with parchment paper and place the bananas on top. Place them in the freezer for about 10 minutes.
2. While the bananas are in the freezer, melt the chocolate over the stove in a small sauce pan on low to make sure it does not burn.
3. Chop on the granola either using your hand, food processor, or place them in a little baggie to crush them.
4. Take the bananas out of the freezer and dip them one at a time in the melted chocolate, covering the entire banana.
5. Place the banana back on the parchment paper and immediately sprinkle with the granola. Repeat steps 4 and 5 until finished.
Once the bananas are completely done and covered, store them in the freezer. They will last a few days.
For a few of the bananas, before I dipped them in chocolate, I spread a thin layer of peanut butter! So delicious!
You may need to use a spoon to cover the entire banana.
Freezing them before isn't necessary it just keeps them a little firm while you are dipping them in the hot chocolate.
