I am going to keep this post short and sweet- just like the taste of these bars and the amount of time it actually takes to make them! I originally intended to have this post up for you all last week but life obviously got in the way and I am finally sitting down to get the recipe up for you all! These bars are so easy to make, just require one bowl, and I can guarantee you that you have all of the ingredients in your kitchen!
I love making these bars at the start of each week for a super quick breakfast on the go or something to hold me over until dinner between work, my evening yoga classes, and dinner. I have a few protein bars that I always stick too, but I love making my own bars because I know exactly what is going in them! Oats, almond butter, chia seeds, coconut oil, my favorite superfood plant based protein blend from Philosophie, and a few other simple ingredients are what makes up these crunchy little squares. I love the cacao magic protein blend because it is filled with superfoods like: organic cacao powder (of course!), organic cacao nibs, organic reishi organic mesquite, maca powder, hemp protein and a few other good for you ingredients. My favorite part about it? There 10 grams of protein in each serving and zero sugar but you actually feel like you are eating something so chocolatey and sweet!
For these bars, all you have to do is mix everything you love together in a bowl with oats as the base and then freeze them until the dough sets! This time I kept them pretty basic, but in the past I have added shredded coconut, chopped dates, goji berries, changed up the almond butter for cashew butter, and chopped nuts. I also like to keep these stored in the freezer because not only will they last longer, but since we are using coconut oil, it tends to melt the bars a little quicker when they are left out in the open for longer periods of time. I realized this when I threw them in my bag on my way to work and when to grab the bar a few hours later and it was totally melted into one big glob! Luckily I had some yogurt and poured all the crumbles on top it for a little parfait!

Yields: 9 or so squares
Prep time: 10 minutes
"Cook time" store in the freezer overnight to settle or at least 30 minutes
2 cups GF oats
1/2 cup creamy almond butter
1/3 cup chia seeds
1/2 cup Philosophie Cacao Magic superfood plant based protein blend
Dash of cinnamon
Dash of sea salt
1 tbsp. vanilla
1/2 cup coconut oil, melted
1/2 cup dairy free chocolate chips
optional add ins:
1/2 cup (more or less) of sweetener: honey or maple syrup.

1. In a large mixing bowl, add the oats, chia seeds, cinnamon, cacao magic, and sea salt.
2. Next, add the coconut oil, almond butter, vanilla, and sweetener if using. Mix together until fully incorporated. If the dough seems too dry, add more of the wet ingredients to the mixture. I would start off with the nut butter, because I tend to not like things as sweet. If you add too much coconut oil they will melt quicker once taken out of fridge or freezer.
3. Lastly, Mix in the chocolate chips.
4. Add the mixture to any desired size pan. I used a 9x 13 in pan and covered it with parchment paper to make it easier to take out the bars.
I kept the squares in the freezer overnight and cut them in the morning. I store the chocolate chip granola squares in the freezer as well since the coconut oil tends to melt them at a quicker rate but you can leave them in the fridge!
