I can't stop eating these protein bites! They are so chocolatey and rich tasting from the cacao nibs, the cacao powder and the Ka'chava chococlate protein powder that you actually feel like you are eating a dessert! To be a little more specific dessert wise, since I added peanut butter in the mix, we are talking that it feels like you are a eating a dark chocolate peanut butter cup! I have been loving these little bites either for my afternoon snack before my workout or to satisfy my sweet tooth craving after dinner! I wasn't planning on posting them to my blog, but I have been making them non-stop so I thought that I would share them with you!
Most of the time that I make my protein or energy bites I am always hungry an hour later or not completely satisfied but this time around I decided to add the Ka'chava chocolate protein powder to the mix. I have always used their vanilla flavor in my smoothies or oatmeal, but this was the first time I had given the chocolate flavor a try....and I think I love it even more! Which, usually I am not much of a sweet person, but this taste amazing! I love the ingredients that it is filled with, the amount of protein it has (24 grams) the fact that it is dairy free and gluten free and filled with so many superfoods! Adding this in the mix along with the other few ingredients really made these bites extra chocolatey and the added protein boost I needed! I also used crunchy peanut butter and decided to throw in some cacao nibs in the mix because I love a good crunch in all my snacks. They are really simple to make and all you have to do is throw everything together in your food processor and blend away! I like to store mine in the freezer since they do last longer that way, but you can always keep them in the fridge for up to a week!
1 cup gluten free oats
1/2 cup cacao powder
1-2 scoops Ka'chava chocolate protein powder
2 tbsp. chia seeds
1 tbsp. coconut oil
1/4 cup cacao nibs
1/2 cup - 3/4 cup crunchy peanut butter
A dash of sea salt & cinnamon
1 tbsp. vanilla
3 tbsp. coconut butter (optional, but I used Essentially Coconut)
1. Add all the above ingredients to a food processor and blend! If you do not have a large enough food processor, start by adding the oats, cacao powder, protein powder, sea salt, and cinnamon first. Blend for a few minutes until well combined. Next, add the peanut butter, coconut oil, vanilla, chia seeds, and cacao nibs. Blend.
2. Taste test and adjust to your preference.
If a dough like consistency is not form, add either 1 tbsp. of coconut oil OR start by adding 1 tbsp. of water to the mix. Blend and then add more only if needed.
