I love snacks! As someone who suffers from chronic migraines when my blood sugar level is low, it is always important for me to have a snack readily available. Also, I have to avoid packaged, protein bars due to my IBS so I wanted to create an alternative that is satisfying, will curb my hunger, and made with as few ingredients as possible! These bites are filled with protein and healthy fats (from the almonds, walnuts, coconut oil, nut butter) that will not only curb your appetite during the afternoon slump, but will keep your energy levels up throughout your workout class. The ground flaxseed and dates are a great source of fiber, which will help regulate the digestive system and keep things moving! Lastly, cacao powder is filled with magnesium that can help fight off migraines! Not only are these super-food bites healthy for you and quick to make, but taste better than any pre-packaged, “nutrition” bar!
1 cup almonds (roasted & unsalted variety)
½ cup walnuts
2 tablespoons hemp seeds
2 tablespoons ground flaxseed
¼ cup cacao powder
½ tablespoon maca powder
1 tablespoon chia seeds
1-2 teaspoons cinnamon
10-14 medjool dates
1-2 teaspoons water (if needed; see instructions below)
Optional: 1 tablespoon coconut oil or any type of creamy nut butter (almond butter, peanut butter, etc.)
In a food processor, grind together the almonds and walnuts for about 30 seconds. Be careful to not over mix the nuts. You want to have a bit of a crunch left to the bites.
Add the cacao, cinnamon, ground flaxseed, maca powder, chia seeds and hemp seeds and pulse a few times until all the ingredients are combined.
Add the coconut oil or nut butter (or both!). Pulse until well combined.
While the food processer is on, add the medjool dates one at a time. (Remove pits!) Adding the dates one at a time will prevent clumping. The dough should begin to form and be somewhat sticky. If not, add 1 tsp. of water or more, but only if needed.
Form the bites into a tablespoon-sized ball.
Will last up to one week in the refrigerator in an airtight, closed container.
Roll the energy bites in either goji berries, unsweetened shredded coconut or more chia or hemp seeds.
A side note: You can mix anything in the food processor! Such as your own protein powder, sweetener, any preference of nuts etc. The options are endless!
