An easy, healthy breakfast you make the night before!
Often times my mornings are hectic and I have little time to prepare a healthy and satisfying breakfast. With this recipe for overnight oats made with ingredients like bananas, chia seeds, cinnamon, and peanut butter, you'll have a nutritious and creamy breakfast waiting for you first thing in the AM!
You can even prepare multiple jars a head of time so all you have to do is roll out of bed, grab a spoon, and focus on the day ahead!
1 large banana
1/2 cup oats
1/2 cup almond milk (or any nut milk)
1-2 tsp. of cinnamon
1-2 tbsp. peanut butter
2 tsp. chia seeds
1/2 tbsp. sweetener of choice: maple syrup, honey, etc. (optional)*
*if you are using a ripe banana, chances are you will not need to add anything sweet!
Mash half of the banana in a bowl. Set the other half aside for the next morning. Pour oats and nut milk over the mashed banana. Add cinnamon, chia seeds, & sweetener of choice. Mix well. Store the mixture in a mason jar or container in the fridge.
In the morning, mix the oats well. Slice the remaining banana and add to the top of the mixture. Drizzle with peanut butter and add any additional toppings.
